Japan is proud of its fine culinary tradition with renowned items such as Shojin vegetarian cuisine
and the Kaiseki tea ceremony cuisine pioneers who have developed the formal cuisine as their set forms
have provided a template, for cooks such as myself and the Funakoshis of Wara,
from which we have been able to create a more relaxed form.
Wara has undertaken to review and make the most of each one of the original principles of the cuisine.

It is the combination of everything: ingredients, recipes, tableware, ambience,
and most importantly, the interaction between the people who prepare the food
and those who enjoy the dishes that has created this new culinary culture.
